Estrada’s Spanish Kitchen

Established in ~1910 in Fresno California, the restaurant was located at 370 N. Blackstone Ave from 1917 to 1997. The  famous recipes were never written down until now. Cruz Estrada the founder would not allow the recipes to be written down because she always said ” Just because you have a recipe does not mean you can cook the food”. 

I am Ralph A. Dillard Jr. aka Randy. I am the last living family member that learned to cook all of our food from Cruz Estrada, her family name to us was “Nini”.  It has taken me several years to complete the cookbook with all of the recipes that were served at the Estrada’s Fresno location. I have been hesitant to publish them because Nini was so insistent that we should not. I do not want these wonderful creations to die with me. I have been very careful to include all of the instruction you need to accomplish the  preparation of the food. This is not a beginner’s cookbook. It is old world cooking that requires time and effort to accomplish. The results will be well worth your labors.
